A New Central Kitchen and Dining Area for the University Psychiatric Clinic Ljubljana

One of our largest projects in 2022 was the design and delivery of a new central kitchen and dining area for the University Psychiatric Clinic Ljubljana. We supplied the kitchen and dining equipment needed to prepare sufficient, high-quality meals for patients and staff at the clinic’s main site and its satellite facilities.

Improving Food Preparation and Meal Service

The new kitchen and its adjoining spaces were designed to make every stage of food preparation and service more efficient. The project is unusual for a public institution: the kitchen and dining area occupy a dedicated building on the clinic’s site.

A Layout Designed Around the Work

The building brings together the kitchen, dining area, staff facilities—including changing rooms and a kitchenette—and food storage rooms on the ground floor. Placing these functions close together shortens the routes staff take throughout the day and helps them use their time effectively. Each room has been positioned with the flow of work in mind.

A Dedicated Line for Assembling Meals

One of the kitchen’s defining features is its dedicated meal assembly line. Around 90% of prepared meals leave the kitchen on trays. Staff assemble them on the line, then use trolleys and insulated transport containers to deliver them to their destinations.

Washing a Large Number of Trays and Dishes

A project of this scale calls for careful planning of every stage, including warewashing. We specified a MEIKO M-iQ conveyor dishwasher capable of washing more than 500 trays from the meal distribution system.
