Early one morning, we set off from Ljubljana for the Dvornik organic farm in Šentanel, where Erika and Damijan had prepared a demonstration of the equipment they use to make their products.
We saw three machines in action:
C 80 automatic sieve, Robot-Coupe
R 652 V.V. vegetable preparation machine and cutter, Robot-Coupe
P6 pasta machine, Imperia & Monferrina
Despite the poor weather, Erika and Damijan welcomed us warmly and showed us how the machines make their work easier. First, we watched the C 80 turn tomatoes into a smooth purée for tomato sauce.
Next came the R 652 V.V. With different discs, it can cut vegetables into cubes, slices and sticks. Its 0.8 mm disc made quick work of shredding cabbage for coleslaw, while the cutter proved useful for chopping vegetables for Dvornikov lonček, one of the farm’s products.
We finished with the P6 pasta machine, which kneads the ingredients and uses different attachments to make a variety of pasta shapes. Afterwards, we enjoyed a delicious soup made with Dvornikov lonček and homemade spelt noodles. A visit to the farm shop meant we could take some of those flavours home with us.
