The Largest Beer Hall in the Primorska Region
Another summer season has come to a successful close. And as we look ahead to the next holiday season by the sea, we are preparing something new.
For those who plan their trips to the coast throughout the year, however, there will be something to look forward to already at the end of October. Kapitol will bring the largest beer hall in the Primorska region together with a high-end à la carte restaurant.
Kapitol Seča is set to open its doors at the end of October 2018 following a complete renovation and transformation into a modern, state-of-the-art venue. We are proud to have played an important role in bringing this major project to life.
From the very beginning, we contributed our knowledge and experience to the project planning, kitchen layout design and preparation of the professional equipment schedule. The entire facility is divided into several dedicated sections, from basic and fine food preparation to meat preparation and, given the location, fish preparation.
A significant part of the kitchen is dedicated to the thermal processing of food, centred around a high-quality and carefully designed Gazi XP-LINE cooking suite.
In addition to these areas, the facility also includes a cold preparation section, pizzeria, pastry kitchen, auxiliary workshop and bar, along with all the equipment required to support the smooth operation of the entire venue.
The investors envisioned an operating concept in which as much of the food production as possible would be carried out in-house. Making this approach possible requires a wide range of specialised equipment, including a pasta machine, Pacojet, Robot Cook, dehydrator and chamber vacuum sealer, among others.
Just as important as good preparation is having the right conditions and facilities for storing ingredients and prepared products. The project therefore includes five custom-made cold rooms – three refrigerated rooms and two freezer rooms – designed entirely to meet the specific requirements of the facility.
Kapitol was a major challenge for our team, and one we were happy to take on. We are now halfway through the project and already looking forward to seeing the final result – one we are confident will be outstanding.
